Cabernet Sauvignon wineries and tasting rooms in Oregon
Cabernet Sauvignon needs more heat than the Willamette Valley ever gives up, so Oregon's Cabernet lives almost entirely in the state's warmer southern valleys, especially the Rogue Valley, where hot days and cool nights have drawn comparisons to Bordeaux.
Farther east, the Rocks District of Milton-Freewater (Oregon's slice of the Walla Walla Valley, sitting on a deep bed of basalt cobblestones) has emerged as a second Cabernet stronghold. Between the two regions, the wide day-to-night temperature swing lets the grape ripen fully without losing acidity, giving Oregon Cabernet more structure and less sheer ripeness than versions from hotter, less variable climates.
The Rocks District announced itself loudly in 2025: Wine Enthusiast's Michael Alberty described Holocene Wines's 2022 The Black Square as "black as squid ink" yet perfectly balanced, and ranked it No. 5 on the magazine's Enthusiast 100, the highest placement of any Oregon wine that year.
That's Cabernet from a place most wine drinkers still don't associate with Oregon, made in two distinct pockets with two distinct personalities. The wineries below split fairly evenly between them. Taste a Rogue Valley bottling against a Rocks District one back to back.
